Microwaves are wonderful magical machines. Ten minutes after I decided I wanted to have cake for dessert, I was eating this MICROWAVE CHOCOLATE CAKE with stewed plums.
MICROWAVE CHOCOLATE CAKE
175g caster sugar140g flour
3 TBSP cocoa
3 tsp baking powder
2 eggs
1 TBSP vanilla essence
100mL canola oil
100mL hot water
Spray with baking spray and line bottom with baking paper a 23cm diameter microwaveable baking dish. In a mixing bowl, whisk dry ingredients. In a jug, mix the wet ingredients. Whisk wet ingredients into the dry until just mixed. Pour into your prepared pan and cover with clingfilm. Microwave at medium high heat (1200W) for 5-6 minutes till it bounces back to touch / skewer comes out clean. Be careful removing the clingfilm, the steam is very hot
