Grammed: Salt and Vinegar Oven Fries










These are ridiculously delicious and addictive. C and I can devour a whole kilogram of potatoes between us in one setting.

SALT AND VINEGAR OVEN FRIES


1kg new potatoes washed, cut into 1 Cm thick fries
2 cups white vinegar
4 cups cold water
2 TBSP salt
Put potatoes water and cold water in to a saucepan. Boil for 15 minutes from cold. Turn off heat and allow to steep in water for at least 30 minutes. Drain and allow to dry.
1/2 cup oil
2 TBSP butter
Preheat oven to 200 oC. Oven rack on middle/top of oven. Put oil and butter in a baking tray and allow to get hot in oven approx 10 minutes.
Arrange half the fries in a single layer in the hot oil (need to do it in 2 lots). Bake for 25 minutes.
Per tray (1/2 the potatoes)
Sea salt 1 big pinch
Fine salt 1 big pinch
1 TBSP white vinegar ~1 TBSP chopped parsley

Place hot fries in a serving bowl. Toss in salt, vinegar and parsley. Serve hot.
