Mussel Zucchini Fritters
2 green lipped mussels, steamed open, chopped finely
1 courgette
1/2 cup flour
1/2 tsp baking powder
1 egg
Grate courgette, then use a tea towel to wring out as much moisture as you can.
In a mixing bowl mix grated courgette, mussels, flour and baking powder.
Beat the egg and milk together then lightly mix through the mussel/zucchini/flour mixture. Batter should be oozy like pancake batter. Rest for 10ish mins while you convince the toddler to go to the toilet and put some clothes on.
Fry tablespoonfuls in a nonstick pan over med-low heat (I used baking spray to grease the pan), approx 1 minute each side
