1 broccoli
1 carrot
1/2 cup flour
1/2 cup cheese
1 - 2 eggs
Cut broccoli up into small florets and microwave covered with a few tablespoons of water for 3 minutes on HIGH (or steam if you have a steamer). Allow to sit covered for a further 1 minute (eg until the microwave beeps at you to remind you to take it out).
Ditto with the carrots, cut into thin slices and microwave submerged in water and covered for 1 minute on high (or steam). Process the broccoli and carrot in food processor till small bits, add flour, cheese, eggs and pulse till just mixed.
Fry heaped teaspoonfuls in non-stick pan, press with spatula to flatten. Only need approx 30 seconds a side. They firm up on cooling.
Freezes well - microwave a few at a time approx 30 seconds.
