Grammed: Hot Cross Buns Pudding

HOT CROSS BUNS PUDDING

4-6 hot cross buns
1 cup cream
1 cup milk
2 TBSP custard powder
4 TBSP sugar
3 eggs
1 tsp vanilla
Butter, softened 

Preheat oven to 175oC, rack at bottom of the oven.
Boil the kettle with around 8 cups of water. Butter a baking dish. Add the cream to the baking dish and whisk in the custard powder, sugar, vanilla and eggs. Add milk and whisk well to combine.
Cut hot cross buns in half and butter each half.
Press the halves into the custard and leave to soak for around 10 minutes. Place the baking dish into a bigger tray (I used a roasting tray) and make a water bath that goes up roughly 1/2-2/3 of the way up the side of the baking dish.
Bake for 45 minutes. Serve hot with berries or stewed fruit +/- maple syrup or just as is for custardy hot cross bun goodness. *Edited to add: It’s flippin good cold too*
