NICOISE-ISH SALAD aka Odd Bods We Had Left in the Fridge the Night Before Shopping Day Salad. Canned salmon, soft boiled eggs, tomatoes, cucumber, a few leaves of spinach, edamame beans from the freezer and stuffed olives tossed together with a vinaigrette - tasted way better than it sounds on paper and actually quite filling!
Nicoise Vinaigrette
3 TBSP white wine vinegar
1 TBSP water
1/4 red onion very finely diced
1 TBSP capers finely chopped
2 garlic cloves finely chopped
4 anchovies finely chopped
1 tsp Dijon mustard
A few sprigs of fresh thyme
3 TBSP extra virgin olive oil
1/2 tsp salt
Black pepper
Put all ingredients in a small jar, cover with lid and shake to mix. Don’t be put off by the anchovies, they just blend in and gives a lovely salty umami flavour with no fishy-ness
