BBQ SALT AND PEPPER SQUID
Frozen squid tubes, defrosted
2-3 big pinches of salt
Freshly ground black pepper
2 cloves garlic, finely chopped
Extra virgin olive oil
Optional: juice half lemon
Optional: 1 small chilli, finely chopped
1. Score one side of the squid tubes with horizontal cuts.
2. Sprinkle liberally with salt, black pepper and olive oil
3. Mix together ~ 2 TBSP olive oil, lemon juice, garlic and chilli to make a dressing and set aside. Lemon juice isn’t traditionally in salt and pepper squid but a little acidity is nice with it. Leave the lemon out if you want your S&P squid to be more authentic tasting.
4. Over a high heat on your barbecue, grill the squid tubes until just springy, turning frequently.
5. Drizzle dressing over squid while still warm.
6. Serve with salad and grilled kumara (sweet potato) or other grilled vegetables.
